sesame soba with salmon


Something healthy and fast! At long last. I'm home and able to make random things out of what I've got in the house. Just a recipe today, no nonsense from me.

sesame soba salad

1 tablespoon soy sauce (low sodium is fine)
1/2 teaspoon kosher salt
1 tablespoon rice vinegar
1 teaspoon sugar
1 tablespoon sesame oil
1 tablespoon sesame seeds

4 cups cooked soba (about 8 ounces uncooked buckwheat noodles)
1 portion (fresh or frozen) raw salmon (typically about 6 oz)
3/4 (or so) cup of shelled edamame, cooked

1. Poach the salmon in simmering water until cooked through. Flake.
2. Whisk the first six ingredients together, and toss with the flaked salmon, edamame, and soba. Salt to taste.
