Hullo! Today I'm posting a little later - I wasn't sure if every day is too much to be posting, but LKJ stated very specifically that something needed to go on, so I am pulling a recipe I made last week. It was sort of last minute, right before we went to our rock climbing lesson. LKJ actually inspired this salad, since she and her husband so sweetly brought us a carb-free dessert when we made dinner for them. Dessert was right up my alley - no sugar substitutes! Instead it was a lovely selection of cheeses and sausage and prosciutto that got devoured with the quickness. This poor cheese got no love, though, because it was STRONG and stinky. So I kept it with the promise to make something out of it.

stinkycheese salad
dressing:

1/4 cup lemon juice or cider vinegar, or a mix

1 tablespoon Dijon

1/4 teaspoon kosher salt

1/2 cup crumbled stinky cheese (I just took a chunk and smooshed it around with my whisk)

Pinch of sugar

3/4 cup extra-virgin olive oil
- fresh ground pepper
salad:
- mix of arugula, spinach, whatever strikes your fancy
- 1/4 thinly sliced onion
- thinly sliced green apple (about 1 apple for 4 people)
- toasted walnuts (optional) or candied walnuts, yum!
Whisk really, really well till smooth. Toss it with the other stuff. Taste and add salt and pepper as needed.
