chinese+french steak and eggs

So here's how my thought process works:  I want twice cooked pork (chinese food) - I should just make it at home - I need leeks and ginger - leeks, ginger, and leftover rice - I should make Jean Georges's fried rice - also bought a bunch of steak on sale - steak and eggs and fried rice for breakfast! I made a few slight changes to the recipe, but it's basically the same.

For those of you who don't know, Mr. Jean Georges is married to a Korean woman and they have some Korean food show that Hugh Jackman has advertised before that I've never seen and probably never will. It's funny, though - upon googling the recipe, I saw it at People magazine, of all places. (On Hugh Jackman's love for this fried rice recipe) "He loves that it's satisfying, Jean-Georges tells PEOPLE of Jackman's dish of choice." Wow, thanks for that insight, JG!

french-fried rice, adapted from Jean Georges. Serves 2-4 depending on hunger and eating abilities



  • 4 tablespoons vegetable oil
  • 3 tablespoons butter
  • 3 tablespoons minced garlic 
  • 2 tablespoons minced fresh ginger 
  • 2 cups sliced leeks, white and light green parts
  • 4 cups day-old cooked rice 
  • 2 teaspoons soy sauce 
  • 4 large eggs 
  • 2 teaspoons sesame oil 


1. Heat vegetable oil in a small, nonstick skillet over high heat. Add 1 tbsp. each of garlic and ginger. Cook until crisp, two minutes. Transfer mixture to a paper-towel-lined plate with a slotted spoon. Sprinkle with a pinch of salt. 

2. Heat butter in a large skillet over medium heat. Add remaining garlic and ginger and cook for 30 seconds. Add leeks and cook until they begin to soften, about two minutes. Add rice and cook, stirring often, until it begins to brown, about five minutes. Add soy sauce and season with salt to taste. 

3. Fry eggs sunny side up: spray a non-stick skillet and heat over medium heat. Crack eggs in, and put a lid on it. Cook until the white is set but the yolk is still runny.

4. To mold: put 1/2 teaspoon of sesame oil into the bottom of a ramekin or small bowl. Smoosh in fried rice gently and unmold onto plate. Otherwise, just serve in bowls and drizzle 1/2 teaspoon of sesame oil onto each.



5. Top with egg, a tiny sprinkling of salt on the yolk and sprinkle with crisp garlic and ginger. Serve... with steak or just by itself!
