speediest salmon sashimi

Taking a day off makes for an even busier day, I think. This morning I found myself famished and happened to be at Trader Joe's looking for a low-carb snack whilst waiting for an oil change, and looked to the salads first. They were dry and sad looking, but I still would have grabbed one were any of them low in carbs. Then... miraculously, I found this:

2 net carbs per serving! Net carbs = Carbs minus fiber. The flaxseeds are roasted, so they're nice and crunchy, and it's salted so it's pretty dang good. It's really really mouth-lockingly sticky, as most natural nut butters are.

Anyway, I had no time whatsoever before my meeting at SCORE (helpful retiree business mentors) but I had to run home, and, hungry, I grabbed the thawed salmon and decided to eat it. Raw. I wouldn't have thought it was safe, but my mom eats raw thawed salmon all the time soooo I figure if it's good enough for her, it's good enough for me!

Salmon "a la minute"

  • Salmon filet
  • Lemon
  • Pepper
  • Sambal oelek (that hot sauce with the chilis in the jar w/ the green top)
  • Jalapeno

Slice the salmon, squeeze the lemon, sprinkle pepper and salt and hot sauce, slice jalapeno, eat.

I'm pretty sure that took me about... 2 minutes. And it's tasty - would I have preferred it with some chips? Um... maybe.
