Went to the gym today, sort of... walked/ran a bit and then got lazy and hungry and came home. Not much time to cook... I'm pretty sure this took about 10 minutes from conception to table.
Fastest Spicy Seared Salmon with Guacamole
Salmon filet, one chunk per person. Usually they're 4-6oz, I think.
Garlic Powder
Cayenne Pepper
Black Pepper - fresh ground, that preground stuff is rubbish. Costco sells a giant cheap pepper thing with a grinder attached.
1. Dry the filets on a paper towel. on one side, sprinkle some salt, and a light sprinkling of garlic powder, cayenne (yup, it's spicy), and a good grind of black pepper.
2. Heat a heavy pan with 1-2 T of olive oil. When it's hot, put the spiced side down. You'll be able to hear when it's hot enough - the fish will sputter a bit, but not smoke. In about 3 minutes, flip it over and sprinkle more of the salt/garlic powder/cayenne/pepper goodness. In 3 more minutes, or when the top and bottom are nice and brown, turn the flame off and keep warm.
1 Avocado
2 T chopped onion
1 t or so chopped cilantro
1/4 lime or lemon, juiced
Smoosh it all in a bowl with maybe 1/2 tsp kosher salt and a grind of pepper. TASTE IT. Add salt or more citrus juice if need be.
Serve together with some diced English cucumber tossed in a tiny pinch of salt and maybe a squeeze of lemon - I just served it with plain cucumber and it was kind of boring. Oh well, it was fast!
